Chocolate milk / hot chocolate

Add a tiny splash of milk to 1-2 heaped tsps of cocoa powder. Mix until it becomes smooth. Add 1 tsp of honey. Add more milk while stirring.

Pesto chicken pasta salad

In a bowl: roughly chopped spinach and lettuce, chunks of cucumber, cooked pasta (spirals work well), white seedless grapes (if you have any), and cooked (boiled/grilled) chunks of chicken breast (pork also works). 
Pour over: 1 portion of Greek yogurt, 2 tbs of pesto (adjust if using "real" pesto), 2 or 3 TVs of lemon juice, salt, pepper, a few slugs of (omega 3) olive oil - all mixed together. 




Smoothie lollies

In a blender roughly chop (pulse?) as one delicious fruit. Approx one peach/nectarine/Nutella cup of strawberries. 
Stir through one portion of Greek yogurt. 
Freeze in ice lolly molds. 
Nom. 



Fajitas

Gently fry finely chopped onion and red pepper, remove when soft and onion is beginning to colour.
Fry finely sliced pork (or chicken or beef) tossed in a mixture of: garlic powder, cumin, paprika, cilantro, parsely, cayenne pepper, black pepper, salt. 
Add the onions and peppers back to the pan and mix all together. 

Serve with rice ("plain" or "Mexican" - lime and cilantro), sour cream (or Greek yogurt or creme freche), small lettuce leaves (or tortillas) to wrap it up in, avocado or guacamole, and napkins.


As plain as I can make it rice

Gently fry a couple of finely chopped shallots in oil. 
Rince 1 cup of rice. 
Add to the shallots and fry for a bit. 
Add 2 cups of water. 
Add (most of) one chicken stock cube (low/no salt!) - make sure it dissolves. 
Add about 1 tsp salt. 
Bring to the boil. 
Allow enough water to evaporate so that you can see all the rice. If you need to stir, do it before this point. 
Put over _extemely_ low heat and cover. 
Check after about 10 minutes. If it's too wet, leave it to cook longer. If it's too dry, and a ladleful of water and leave it to cook. 
When it's done, eat!!!

Additions: any or all combinations of: 
 normal onions, chopped carrots, peas, sweet corn, bacon (fried at the beginning), chickpeas, chopped green beans, chopped garlic, cilantro, lime juice (excellent with Mexican dishes), etc....

Not really Greek salad

Chopped lettuce and spinach
Quartered radishes
Chunks of cucumber
Feta cheese
Thinly sliced red onion (left to soak for a couple of minutes in red wine vinegar) 
Drizzled with olive oil (extra omega 3) and red wine vinegar, with a little bit of black pepper. 

Goes extremely well with grilled pork chops and lemon juice. 

Not quite KFC chicken : version 1

Strips of chicken breast coated with a mixture of: chickpea flour, garlic powder, cumin, black pepper, dried coriander, paprika, salt, herbs de Provence, and a bit of dried oregano. 
Fried. 

They were delicious, and a bit crispy on the outside, but the coating was obviously too thin compared to KFC. Double dip? Make a batter not a dry coating? Hmm. Research will be done.

Ice lollies

Fill lolly molds with your favourite fruit juices. Layers are delicious but require extra patience. Here we have pineapple on top and orange underneath.
